Pumpkin Bread (makes 2 loaves/4 small)
3 cups | organic whole wheat flour | 1 tsp. | Ground cloves | |
2 cups | turbinado sugar | 1 tsp. | nutmeg | |
1 tsp. | baking powder | 3 | beaten eggs | |
1/2 tsp. | baking soda | 1 cup | olive oil | |
1/2 tsp. | salt | 1 tsp. | vanilla | |
1 tsp. | cinnamon | 1 1/2 cups | cooked pumpkin | |
1 cup | chopped pecans |
Combine eggs, oil, vanilla, and pumpkin. Stir dry ingredients into mixtures. Fold in pecans. Pour into greased loaf pans. Bake at 325° for 1 hour (small) or 1 hr. and 10 mins (large).
