Pumpkin Bread (makes 2 loaves/4 small)

3 cups organic whole wheat flour   1 tsp. Ground cloves
2 cups turbinado sugar   1 tsp. nutmeg
1 tsp. baking powder   3 beaten eggs
1/2 tsp. baking soda   1 cup olive oil
1/2 tsp. salt   1 tsp. vanilla
1 tsp. cinnamon   1 1/2 cups cooked pumpkin
1 cup chopped pecans      

Combine eggs, oil, vanilla, and pumpkin. Stir dry ingredients into mixtures. Fold in pecans. Pour into greased loaf pans. Bake at 325° for 1 hour (small) or 1 hr. and 10 mins (large).
